What is IQF and why does it change everything for premium seafood?

The technology that allows a snow crab captured in Patagonian channels to arrive at a restaurant in Tokyo or New York with the same flavor, texture, and freshness it has when it leaves the sea.

When we talk about frozen seafood, most people imagine that block of ice you have to wait to thaw completely to use just one piece. A compacted crab, seafood that released all its water into the pan, a texture that has nothing to do with the fresh product. That experience has a name: conventional freezing. And it’s not what we do at Mar Austral Origin.

We work with IQF technology: Individual Quick Freezing. The difference may sound technical but you feel it on the plate.

What happens when we freeze poorly

When seafood freezes slowly, the water inside muscle cells forms large ice crystals. Those crystals puncture cell membranes. When thawing, the product loses juices, texture, and flavor. What reaches the plate is a degraded version of what it was.

What makes IQF different

In the IQF process, each piece — a whole snow crab, a cluster, a portion of meat — passes individually through a freezing tunnel at -35°C with high-speed forced air circulation. Freezing time goes from hours to minutes.

At that speed, the ice crystals that form are microscopic. They don’t break cells. They don’t destroy texture. They don’t extract juices. When the product thaws, it becomes what it was: firm, juicy, with the flavor of Patagonian sea intact.

How we apply it at Mar Austral Origin

From the moment the snow crab or crab arrives at our plant in the Aysén Region, time is the enemy. The window between capture and entry into the freezing tunnel is measured in hours, not days. The process is: reception, visual classification by size and quality, and IQF tunnel at -35°C. No stops. No delays. The result is stored at -25°C until dispatch.

Why it matters for the international buyer

An importer in Japan or an executive chef in New York cannot visit Patagonia before placing an order. What arrives in the box is all they have to judge the brand. If the snow crab arrives with perfect texture, without excess liquid when thawing, with the right color and flavor — the order repeats. If it doesn’t arrive that way, there’s no second chance.
