PATAGONIAN KING CRAB AND SOUTHERN KING CRAB

The crustacean family brings together the most visually striking references in the catalogue: high-impact pieces for display, consistent calibres for menus and documentation prepared for audits and technical meetings with importers. Patagonian king crab (Lithodes santolla) is a direct cousin of Alaskan King Crab, but its growth in the cold waters of the far south gives it greater meat density and a more complex flavour profile.

Catches are concentrated in Magallanes, Tierra del Fuego and areas of the South Pacific, with vessels operating under quotas from the Undersecretariat of Fisheries. Each lot is identified by quadrant, vessel and plant; technical documentation reaches the importer accompanied by the same origin and export narrative we use throughout the rest of the site.
