Chilean red sea urchin (Loxechinus albus) is one of the highest unit-value products in our catalog and requires the strictest quality control. We work with chilled tongues for local gastronomy clients and frozen IQF and brine formats in shiozuke style for Japanese and Korean buyers, where southern sea urchin competes in the same category as premium Hokkaido uni.

The cold waters of southern Patagonia (4°C–10°C) produce slower sea urchin growth, resulting in denser tongue, more intense color, and deeper iodine profile.

Counter-season with the Northern Hemisphere — our southern harvest window complements the Japanese fishing closure, ensuring premium supply 12 months of the year.

The fishery is regulated by the Undersecretary of Fisheries with seasonal closures and regional quotas; our plants operate with dedicated lines for calibration and packaging in thermal cells.
